| 1/3 cup chopped onions 1/2 cup chopped peppers 1/2 cup cooked rice 3/4 cup canned black beans 2 teaspoons olive oil 2 teaspoons fajita seasoning Black bean salsa 2 to 4 low-fat tortillas |
Drain beans reserving liquid. In
skillet, sauté onion, pepper, and fajita seasoning in 1 teaspoon oil 'til onion
softens. Add remaining oil, beans, and rice while stirring. If needed, add liquid from beans to keep rice and beans from sticking. Stir continually until beans and rice are hot. Heat tortillas in microwave or oven according to directions. Spread tortillas with salsa and bean mixture in the quantity of your preference. |
Notes:
1. I prefer fajita seasoning with mesquite flavor.
2. I sometimes add a Veggie Slice (Galaxy Foods), more to add protein than taste because you can't really taste it with the salsa. Note: Galaxy Foods Veggie Slice has milk protein in it. If you add this, it will no longer be an animal-free dish.
3. I heat tortillas in the microwave. I layer (on a paper plate) a damp paper towel, a dry paper towel, up to four tortillas, a dry paper towel, a damp paper towel. The paper towels are useful at the table because burritos can be very messy. I heat for less than a minute but you have to experiment with your microwave. There is a very fine line between just right and too hard when heating tortillas by microwave.
