1/2 Onion, medium size, chopped 1/2 Bell Pepper, medium size, chopped 1 Carrot, medium size, chopped 1 Potato, medium size, peeled and sliced 2 cups combined dried lentils, split mung beans, split peas
1/2 pound tofu, firm, squeezed dry
1/2 cup brown rice, cooked 1 tsp salt 1 tsp coriander seed, ground 1 tsp thyme 1/8 tsp garlic powder
Optional: 1 T canola or olive oil
Cook onion, bell pepper, carrot, bean or peas of your choice, potato together until all done.
Squeeze dry tofu, add to mixture and mash together.
Add brown rice, salt, thyme, garlic powder, coriander seed and optional oil. Mix well.
Grease small loaf pan(s). Cook in 350 degree oven until crusty and brown on top.
