FWVS's Recipe Garlic Mashed Potatoes: a main or side dish.
| 5 lbs. red or white potatoes, peeled, and cut in
cubes Water to cover 8 cloves garlic 1 package silken tofu Salt and pepper to taste. |
Boil potatoes until done. Drain and transfer to a
bowl. While potatoes are cooking, sauté whole cloves of garlic in olive oil until soft. Crumble tofu into blender and blend until smooth. Add "milk" and garlic/oil mixture, then blend until smooth. Pour mixture over potatoes and mix until smooth. You may wish to mix with a hand mixer. Add salt and pepper. |
This excellent side dish with tofu can also double as your main dish at any meal.
