FWVS’s Recipe Garlic Mashed Potatoes: a main orside dish.
8 cloves garlic 3 T olive oil
1 package silken tofu 1/4 cup non-dairy "milk"
Salt and pepper to taste.
While potatoes are cooking, sauté whole cloves of garlic in olive oil until soft.
Crumble tofu into blender and blend until smooth. Add "milk" and garlic/oil mixture, then blend until smooth.
Pour mixture over potatoes and mix until smooth. You may wish to mix with a hand mixer.
Add salt and pepper.
This excellent side dish with tofu can also double as your main dish at anymeal.
