CyberParents' Recipe Mashed Potatoes: the healthy way--sans butter or margarine.
| 3 cups potatoes, peeled, and cut in cubes. Water to cover. 1 tsp. salt |
Boil potatoes until done. Mash potatoes, adding canola oil, soya milk, salt & pepper. Mix well. |
Garlic is also a popular addition to mashed potatoes now. Taste as you add.
Although this works out to 4-5 grams of fat per serving, it is not the hydrogenated fat of commercial margarine or the animal fat of butter. Experiment with reducing canola oil and increasing soya milk if you wish to lower fat.
