CyberParent Recipe Peanut Dumplings with Orange Sauce
| 1 lb. firm tofu 8 T chunky peanut butter--natural, of course 3 T miso 3 T water 6 T onion, minced 1 medium bell pepper, minced 8 T squash, minced 4 T minced walnuts or cashew nuts 1/4 tsp. salt 1/2 cup orange juice concentrate 2 tsp. apple cider vinegar 2 tsp. water 1/8 tsp. garlic powder 1/4 tsp. salt Cornstarch to thicken Kale, Collard Greens, Cabbage, steamed |
Preheat oven to 375 degrees. Lightly oil a cookie
sheet. Mash tofu with fork. Add peanut butter, miso, water, onion, pepper, squash, nuts, and salt. Mix
well. Bake for 30 minutes or until golden brown. While peanut dumplings bake, combine orange juice, vinegar, garlic powder, and salt in small saucepan. Simmer for 2 minutes. Dissolve small amount of cornstarch in water. Add to sauce and simmer for two minutes until thick. Serve on steamed greens or cabbage or combination of all. Drizzle sauce over dumplings and greens/cabbage. |
