CyberParent's Scalloped Potatoes Recipe.
There is a healthy way to make creamy scalloped potatoes. Optional bulghur wheat and barley add protein.
2 medium potatoes, sliced 1/4 inch thick
1.5 cups soy milk.
1 T cornstarch
1 tsp. salt
1 tsp. roasted, seasoned garlic
Optional:
Pepper, if any, to taste
1 T bulghur wheat (adds protein)
1 T barley (adds protein)
Stir cornstarch into soy milk until smooth and lump free. Add salt and seasoned garlic plus optional barley and bulghur wheat and optional pepper to taste.
Arrange potatoes in oven-to-table dish.
Pour over potatoes, cover.
Bake for about 45 minutes. Remove cover and brown top.

Microwave on high for approximately 15-16 minutes, turning once.
Serves 3 to 4.
Note: Easily doubled or tripled but remember: sauce should cover potatoes.
