Recipe for vegan chili beans.

Doritos’s Recipe for ChiliBeans

Don’t let the number of ingredients scare you. Thisis as easy as opening cans; it’s quick; it feeds 6 people.

Recipe
12 oz package frozen chopped onions, about 2.5 cups
10 oz package frozen chopped bell peppers, about 1.5 cups
1 15 ounce can vegetable broth
1/8 tsp. garlic powder

Optional
2 T barley
2 T wheat germ
3 T bulghur wheat

1 T chili powder
1 tsp. Italian seasoning
1 can diced tomatoes with chilis
1 15 oz diced tomatoes

1 15 oz can Great Northern beans, rinsed & drained
1 15 oz can black beans, rinsed & drained
1 15 oz can pinto beans or black eye peas, rinsed & drained

Pour vegetable broth in Dutch oven. Add onions and peppers. That’s right, add the entire packages. Add garlic powder and optional barley, wheat germ,  and bulghur wheat. Simmer for ten minutes, stirring occasionally.

Add remaining ingredients and bring to a boil. Cover and simmer for another ten minutes.

Serve additional chili powder on the side. This is mild.

The hardest work here is opening the cans.

 

If you need more iron in your diet, add black eye peas rather than pintobeans. Draining and rinsing the beans and peas is optional, too, so try it both ways andsuit yourself.
