Choose a pancake mix with no eggs or milk. This is not easy to do
but I have seen them. Use 1/2 banana per egg. You are done! But... try making a few extra for the freezer. The bananas keep them very moist--even for toaster heating. |
After years of buying pancake mix, I looked at Grandma's cookbook because we are trying to cut hydrogenated fat from our diets. Lo and behold--pancakes are not much more than flour and baking soda. Takes an extra three-five minutes to make them from scratch with no "bad" fats, eggs, or cow's milk. Amazing!
