Recipe:  Eggless "egg" salad or sandwich spread.

Ruth’s Eggless "Egg" Salad or Sandwich Spread.Recipe Bedford, TX

Recipe
2 cups firm tofu, pressed or baked dry

1 cup, cooked carrots, broccoli, and kale or mustard greens: approximately equal parts

1/3 cup cooked rice
2 tsp mixed spices
1 T plus 1 tsp mustard, partial portion of dijon mustard adds flavorful "bite"

1 cup minced raw vegetables such as onion, bell pepper, poblano pepper, cucumber, zuchini, or yellow squash, celery, bok choy

Optional: 1 to 2 T pickle relish

Salt and pepper to taste

Press tofu as dry as possible. Crumble into mixing bowl.

Add cooked carrots, broccoli, and greens. Mash all.

Mix in mustard, rice, and spices.

Mix in  raw vegetables and optional pickle relish.

Correct seasonings.

 

 

Use as sandwich spread, as salad, and to stuff tomatoes or mushrooms.

Tip: Use a variety of vegetables for health and taste.
