Halloween black rice with sweet potato recipe.

Black Rice with Sweet Potatoes

1 cup black rice or Canadian wild rice (buy at natural food store bulk department)
2.5 cups water
1 cup sweet potatoes, diced
1 cup orange bell pepper, chopped
1/2 cup red onion, sliced thin, then chopped
2 T sunflower seeds, ground 
1 tsp salt
1/2 tsp ground black pepper

Rinse rice. Chop vegetables. 

Grind sunflower seeds or any nut in coffee grinder.

Bring water to boil. Add all ingredients.

Cook until rice is done.

Fluff and serve.
