CyberParent’s Oven "Fried" Potatoes with optionalgarlic.

Cookbook Reviews 3 medium potatoes, peeled and sliced about one inch thick.

1 T olive or canola oil

Salt and pepper to taste

1 tsp. roasted, seasoned garlic with or without black pepper

Note: If you do not use garlic with black pepper, add black pepper to taste. Preheat oven to 450 degrees.

Mix oil with all spices except optional paprika. Pour into an oven-to-table dish.

Add potatoes; turn to coat well.

Bake for 30 minutes. Loosen potatoes with spatula and turn over. Continue baking until crispy on outside but very tender inside–about 15 to 20 minutes additional.

Serve immediately from pan.

Serves 3.

Note: Easily doubled or tripled but remember: only one layer of potatoes in pan.
