2 cups corn kernels, cooked

1 red onion, diced 1 red pepper, diced 1 cup minced fresh cilantro

2 can black beans, rinsed and drained 1 tsp chili powder or to taste.

2 T olive oil 1/4 tsp. garlic powder 1/2 tsp. salt 2 T balsamic vinegar 2 T lemon juice, fresh if possible Freshly ground black pepper. Start corn cooking. When done, drain and cool.

While corn cooks, dice onion and bell pepper, then mince cilantro.

Add black beans and chili powder.

In separate bowl, add olive oil, garlic, salt, balsamic vinegar, lemon juice . Mix.

Add corn to bean mixture, pour over dressing, toss and top with freshly ground black pepper to taste.

In one minute more than the time it takes the corn to cook, this can be on theway to your dinner table. Serve with salsa and pita bread or corn tortillas for afinishing touch.
