Recipe: Banana Cake
Nancy’s Banana Cake Recipe Plano, TX
2 cups whole wheat pastry flour 1.5 tsp baking soda 1/4 tsp salt
1 cup sweetener of your choice 1/3 cup canola oil 2.5 cups mashed banana 1 tsp vanilla extract 1/4 cup soymilk
Optional: 1 cup chopped nuts Chocolate Syrup Preheat oven to 350 degrees.
Mix flour, baking soda, and salt in a small bowl.
Beat sweetener and oil together in a large bowl, then add mashed banana. Add soymilk and vanilla; mix thoroughly.
Add the flour mixture and the optional nuts; stir to mix.
Pour in nonstick or lightly oiled pan, 8 or 9 inches square. Bake 45 to 50 minutes, until toothpick inserted into center comes out clean.
Optional: Drizzle with chocolate syrup or ice with 1/2 recipe chocolate icing.
